Linguine Marinara

My very own recipe posted on goneraw.com!
1 Serving

I created this quite by accident. It is so simple yet so increadibly yummy. I had no idea that the texture of zucchini noodles would change so much by simply making them wider using a vegetable peeler! This recipe could easily be doubled to make two servings rather than only one.

Ingredients
1 Small Zucchini
½ Large Tomato
dash Sea Salt , to taste
dash Italian Seasoning, to taste
½ tablespoon Extra Virgin Olive Oil
1 tablespoon Pine Nuts

Preparation

Linguine Noodles
Use a vegetable peeler to “peel” wide linguine noodles from zucchini

Marinara Sauce
1. Slice a large tomato in half and place one half in blender (I used my convenient little Magic Bullet) and store the other half for later use
2. Add sea salt, Italian seasoning, and olive oil and blend to desired consistency
3. Mound noodles, add sauce and top with pine nuts.
Delish!

Pecan Pie Bites

My very own post on goneraw.com :)
3-6 servings

This is so easy and tastes exactly like a bite of pecan pie. My family loves to make holiday treat plates to give as gifts to friends and neighbors each year and these are definitely going on the plates! What an easy way to show our friends and neighbors just how simple and easy delicious raw treats can be.
This recipe makes 6 but the picture only shows 5 – any guesses where the 6th one went? Sorry, I couldn’t wait ;)

Ingredients
6 Dates, Pitted
6 Pecan Halves
dash Cinnamon, Optional

Preparation
If your dates aren’t already pitted, remove the pit. Stuff a pecan half in each date and you’re done. You can add a sprikle of cinnamon to the pecans before stuffing them in the dates if you like.
